How I'm Combating Dinner Boredom

This past weekend, I decided I was totally over the meals we've been having for dinner. Too many frozen pasta dinners and pizzas lately had put me over the edge.

Neither of us are big on cooking, but I decided the best way to combat my dinner boredom was to bite the bullet and track down some new recipes to try.

On Monday, I chose two recipes and picked up the ingredients I needed. I made The Daily Dish's Baked Creamy Chicken Taquitos on Tuesday night (and we had leftovers for lunch the next day!). Then last night, I tried Skinny Baked Broccoli Mac & Cheese (plenty of leftovers too!).

Taquitos and mac & cheese aren't too far out of our comfort zones, but these dinners weren't coming from a box or the freezer. Although taking the time to plan meals and try new recipes isn't an original idea, it was just the change I needed to mix things up at dinnertime.

  1. These looks super tasty! I've also encountered a little meal boredom. Mostly because I bring dinner leftovers to work for lunch. How is it that I could eat a turkey sandwich every day pre-pregnancy, but then get bored of all dinner options?

    We have a plethora of cookbooks as well as a list of "favorites." If we're in a rut, we'll either flip through the cookbooks (or Google Reader or Pinterest) or make one of our favorites that we haven't made in a while.

    Thought that's not to say that we don't resort to a frozen pizza and salad every so often ;)

    1. I'm shooting to make a couple of dinners a week. I don't mind the leftovers for lunch (as long as it's not all week long!) and I'm hoping some of these "new" recipes become "go-to" meals for us -- kind of like your list of favorites.

      Maybe I'm being pickier now because I actually enjoy food again haha... although I'd like to incorporate some healthier options so losing this baby weight won't be as much of a challenge down the line :)
